I don't know about you but one of my favorite things about summer is all the fresh produce. I grew up with a mother who can bring plants back to life and we have almost always had a garden no matter where in the world we were living. Summer typically means fresh tomatoes and cucumbers from the garden and quick easy dinners without turning on the oven.
Here is one of my favorite summer dishes that I was inspired to make thanks to a friend at a book club gathering. Fruit salsa is a finely diced fruit salad that is perfect as a dip with cinnamon pita chips or graham crackers. It is also the perfect topping for ice cream or yogurt in the summer.
Fruit Salsa.
Ingredients:
3 kiwis
1-2 peaches
1 container of strawberries
1 pint blueberries
1 can mandarin oranges, drained
1/2 pint raspberries
cinnamon pita chips or graham crackers for dipping
Steps:
1. Dice all fruit into small pieces. I typically cut the blueberries in half, then dice the other fruit.
2. Place fruit in a bowl together.

3. Stir to mix fruit.
4. Cover and chill in the refrigerator for at least one hour.
4. Serve with cinnamon pita chips or graham crackers.
5. Enjoy.
See told you this dish is easy. I don't add any sweeteners since the fruit is so sweet and will macerate without the additional sugars. Please let me know if you decide to make this dish.
