Meal Plan Monday {Salad Challenge}

Hey y'all,

I love hearing other's meal plans for inspiration for my own meals. I love looking through cookbooks and Pinterest but often I stick to a list of favorite meals. It can also be hard to cook for one so let me know if you want to see more recipes on here.

A few weeks ago, Brittany from Eating Bird Food hosted a salad challenge. I was out of town and decided I would start the challenge this week now that I am back to the swing of things (and ate poorly this weekend with a birthday lunch, potluck, and book club snacks). The premise of the challenge is to eat one meal sized salad each day for five days. I am focusing on salads for lunches this week as I love feeling energized and that I filled up on veggies in the afternoon. Last year, Brittany hosted a ten day salad challenge and you can find the grocery list and recipes on this post. Brittany even has a whole section of salads on her recipes page here.

Here are some of my favorite salad recipes when I don't want to make another Cobb, Caesar, or Greek salad:


Today's salad is a simple mix of spring mix, tomatoes, red onion, cucumber, carrots, a turkey burger, sunflower seeds, and Dairy Free Ranch from Tessemae's (I have found it at Whole Foods and Harris Teeter).
