I love hearing other's meal plans for inspiration for my own meals. I love looking through cookbooks and Pinterest but often I stick to a list of favorite meals. It can also be hard to cook for one so let me know if you want to see more recipes on here.
A few weeks ago, Brittany from Eating Bird Food hosted a salad challenge. I was out of town and decided I would start the challenge this week now that I am back to the swing of things (and ate poorly this weekend with a birthday lunch, potluck, and book club snacks). If you want to join you can sign up here for an e-book that includes a grocery list and recipes.

Here are some of my favorite salad recipes when I don't want to make another Cobb, Caesar, or Greek salad:
Grilled Chicken Salad with Strawberries and Spinach (add walnuts!)
Today's salad is a simple mix of spring mix, tomatoes, red onion, cucumber, carrots, a turkey burger, sunflower seeds, and Dairy Free Ranch from Tessemae's (I have found it at Whole Foods and Harris Teeter).
What is your go-to salad recipe?
Favorite dressing recipe?
Best,
Hey, Jessica. Your salad challenge is simply awesome. Is it possible to participate in the challenge with paleo salads?
