Five on Friday {February 24}

Hey y'all,

I'm so excited that we have made it to Friday! It has been a strange few weeks at work this month (as in I have yet to work a complete week) due to lots of HR based training courses but I am ready for a relaxing weekend and starting Lent next week.

one. Spring Weather. Y'all, it is supposed to be 78 degrees today. I have been loving the early spring weather here in NC. I have been able to bring out my Jacks and enjoy nice walks outside. It is crazy to think that last month included an ice storm and 9 degree weather.

two. When Calls the Heart. Season 3 of When Calls the Heart is on Netflix! If you have not watched this show, it is based on Jeanette Oke's books about a mining town in western Canada in 1910. It is just good classic tv and season 4 just started on Hallmark this month.

three.Target Workout Tops. If you need a few new workout tops to keep you motivated towards your goals check out Target. A large selection were on clearance at my store and I picked up this tank for under $10, this one for $6, and then with Red Perks picked up this tank for FREE!

four. Lent. This Lent I will be walking through Isaiah with the She Reads Truth Study Book. I am excited to spend the next 7 weeks in the word and remembering that we are His and the Lord has given us the best gift in the completed work of Christ. I am also going to be giving up on non-nourishing foods as I remember to feed my soul more than feed my desires for sugar and dairy. five.   LuLaRoe. If y'all saw in my post yesterday I am hosting an online LLR pop up in my friend Laurin's group on Tuesday beginning at 12pm EST. If you don't know a lot about LLR its a company that sells cute tops, skirts, dresses and what they are most known for leggings through consultants. I personally love that a lot of the pieces are made here in the USA including the two Cassie skirts I own that I wear to work a lot. All the pieces are unique and each print is only made into 5,000 garments. I hope that clears up some questions I got yesterday!
 What makes LuLaRoe so unique? LuLaRoe only produces up to 5,000 pieces of clothing in a particular print. If you find a print and LOVE it, GET IT! Once it's gone, you may never see it again. You may actually have a piece of clothing that no one else in your area or even your state has. That's just one of the many things that makes LuLaRoe so unique!:

Thyme For Thursday {Slow Cooker Turkey Meatloaf+LuLaRoe Party}

Hey y'all,

Life over here has been busy over the last two months. Work has calmed down from one of our busy seasons but it has also been ACC basketball season. Being in the Chapel Hill area, I watch two little boys whose parents cheer on the Tar Heels at a lot of games in the Dean Dome meaning I head straight from work to watch Finding Dory or Chuggington. It's a lot of fun and it helps the fact that I have a goal of paying off my car and student loans in the next year! So because of this, quick meals have been essential. I made this recipe from the Skinnytaste Cookbook, Fast and Slow and it's perfect for the fall and winter when you want a homecooked meal but have no time.

Before we get to the recipe, I feel a little silly posting about meatloaf considering it is almost 80 degrees here in NC today but the weather has been making me itch for vacation and I am teaming up with my friend Laurin to host an Online LuLaRoe Pop Up shop Tuesday, February 28th at 12pm EST through Wednesday, March 1st at 12pm EST. I didn't think I would ever be a LLR fan since leggings and a top are not my style or even work appropriate for me but I have fallen in love with their skirts and dresses. I am currently rocking their "Cassie" pencil skirt at work with a top and cardigan and feel amazing.

I personally did a lot of window shopping in LLR groups before finding prints and styles I love so feel free to join the group just to window shop. I personally am on the hunt for a dress for Easter Sunday and some pieces for my vacation in May.


1 teaspoon canola oil
1 large shallot, minced
11⁄2 pounds 93% lean ground turkey
2⁄3 cup Italian seasoned bread crumbs
1⁄2 cup chopped cremini mushrooms
1⁄4 cup ketchup*
1 large egg, beaten
1 large egg white
1 teaspoon dried marjoram
1 teaspoon kosher salt

2 tablespoons ketchup*
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon light brown sugar
*I used Tessamae's Ketchup since it is refined sugar free to only have the small amount of brown sugar as the sweetener in the dish.

For the meatloaf: Cut a 15 x 8-inch piece of parchment paper and place it in a 5-quart slow cooker, allowing the edges to come up the sides (this will make it easier to take the loaf out after it’s cooked).
In a small nonstick skillet, heat the oil over medium heat. Add the shallot and cook, stirring, until golden, 2 to 3 minutes. Transfer to a large bowl. Add the turkey, bread crumbs, mushrooms, ketchup, whole egg, egg white, marjoram, and salt. Mix well and shape into an oval loaf. Place in the slow cooker.

For the sauce: In a small bowl, whisk together the ketchup, Worcestershire sauce, mustard, and brown sugar. Brush half of the sauce over the loaf and refrigerate the remaining sauce.

Cover and cook on low for 6 hours, until a thermometer registers 165°F. I even have cooked this overnight while I slept. I then finished it up in the broiler in the morning (with all the sauce since I accidentally didn't brush half on while it was in the crockpot.)
 Preheat the broiler. Line a baking sheet with foil.

Transfer the meatloaf to the lined baking sheet. Brush with the reserved sauce. Broil until a crust forms, 1 to 2 minutes. Cut into12 slices, divide among 6 serving plates, and serve.

I served this with a big salad but you could also make some mashed potatoes or cauliflower and make it a hearty weeknight meal.

Happy Valentine's Day

I hope that you are having a wonderful Tuesday and even if you are single are celebrating all of your loved ones and community today.

Today I have a low key evening planned. I was supposed to babysit but sick kids change plans. I will probably clean my kitchen (seriously it needs some love) then cuddle on the couch with my cat catching up on TV and getting in bed before 10pm. 

My bible study is having a galentines exchange next week so I get to shower one of the women with sweets and fun goodies to remind her that she is loved!

Sunday Sayings

Hey y'all,

My bible study has been walking through Ephesians over the last few weeks and grace, mercy, and chosen have been a big highlight. It has een a great reminder that we are chosen, each of us by the Lord merely for his glory by His grace. Reading through a chapter each week has helped me stop and dwell on the word each morning and my biggest reminder is that grace changes everything.

Five on Friday {February 10}

Hey y'all,

I loved getting to know you through my birthday post, if you missed out you can read it here. Now I know it is pretty late on Friday night but I finally am sitting down to write a post. As usual, I am sharing five things I am loving this Friday.

one. If Gathering. Last Friday I attended an If: Local to watch the live stream of the If Gathering. If you are not familiar with If, there is a yearly gathering in Austin of Christian women all based on the question If God is real, then what? This year's focus was on discipleship and I loved Jeanie Allen's open message about growing small and deep. While the live stream stopped being available on Tuesday, they will put out the gathering on their shop. It was an amazing conference with over 9 hours of wonderful speakers, worship, and discussion. Discipleship has come up multiple times over the last few weeks in various venues so if you have any devotionals I should read as I work on discipling others I would love to hear your suggestions.
 two. Birthday Brunch. Last Saturday, a few of my sweet friends came over for pancakes, mimosas, and cake. It was a great time to just hang out, enjoy yummy food and connect with everyone. I highly reccommend hosting a brunch with friends especially since that means you can wear pjs!
three. Crunch then Brunch. I spotted this tank at Target earlier this week and I think I need to grab it.
four.Hello Fresh vs. Blue Apron. I am going to try out both Hello Fresh and Blue Apron next week and I plan on sharing my experience with ya'll. Being dairy free and a picky eater it can be a challenge to look at meal planning services but I will share more next week. Do y'all have a favorite meal service?

five. Beauty and Lord Voldemort. Y'all, I am a huge Beauty and the Beast fan and already have tickets to watch it with my bible study. I might also have plans to watch it with my Mom the day if comes out. If you are a Harry Potter and Disney fan, this trailer will make you laugh out loud. It was the perfect pick me up today.
six. This guy gets shots tomorrow. :( Let's hope he likes the new vet and doesn't hate me.
