Now I have never been a fan of cauliflower and really any cooked veggies so I will say I was pretty surprised when I tried out this recipe from the Skinnytaste blog and ended up liking it so much. It was very simple since I ended up snagging a bag of frozen riced cauliflower from Trader Joe's.
Ingredients:
- 1 12oz bag of Frozen Riced Cauliflower
- 1 tbsp olive oil
- pinch of salt
- cooking spray
- 1/2 small onion, diced fine
- 1 cup frozen peas and carrots
- 2 garlic cloves, minced
- 5 scallions, diced, whites and greens separated
- 3 tbsp soy sauce, or more to taste (I'm going to try this with Coconut Aminos next time)
Heat a large saute pan or wok over medium heat. Add the olive oil and saute onions, scallion whites, peas and carrots and garlic about 3 to 4 minutes, or until soft.
Raise the heat to medium-high. Add the cauliflower "rice" to the saute pan along with soy sauce. Mix, cover and cook approximately 5 to 6 minutes, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside. Add the egg then remove from heat and mix in scallion greens.
I ended up sauteing zucchini, mushrooms, and more onion and added it to the rice along with some teriyaki chicken. Delicious!

ReplyDeleteI've seen cauliflower rice before but I've never had the time to make it. I didn't realize you can buy frozen cauliflower rice! I'll have to look for it because this looks super yummy!! =)
